Hints for the clue that begins, “I’ve flown far and wide…”

1st part

One of the watch towers flanking the walkway in front of Soarin’ is next to a building. You need the name of that establishment. The name of that place is nine letters in total, which is the base of a Caesar shift replacement cipher. For each letter, shift the letters in the alphabet by the numbers beneath each letter, to the right if it’s a positive number and to the left it’s a negative number. For example, if the original letter was “K” and the number beneath it was -6, then the real letter would be “E” (by counting 6 letters left of the “K” in the alphabet).

2nd part

Once you find the Grizzly Peak sign, the clue itself becomes the way to solve it. Namely, the paper the clue is written on. You’ll notice it has holes in the paper, which probably means something, like letters, are meant to show through. The first half of the clue should give you an idea of where to place the clue to see what is meant to show through.
